This year we are trying the cut water curing in an effort to decrease the curing time
Salt curing takes a while. So lets try water curing w more frequent changes
Picked the olives late this year as they didn't wripen till december and were a lot smaller this year than years past.
- Picked the olives and rinsed them in a bucket
- Ran a slit w a knife around them the long way and immediately dropped them into some water
- Changed the water 2-3 times a day for 3weeks (were ok at 2wks)
- Brine = 3tablespoons pickling salt to 4cups water. warmed. stirred. cooled
- Added olives to brine with Rosemary sprig and 1 clove garlic to steril mason jar and stored in fridge on 1/2/24
- ALSO... Olives in Brine overnight to be added to olive oil w Rosemary in AM
