2022 - Salt Brine Cure Our Mission Olives

2022 - Our olive tree is now a couple years old and we were able to full a full quart w fruit this year. Below is an attempt at salt curing them.

Using salt brine to cure mission olives from our tree

The salt brine approach has two steps. It starts by using medium strength brine followed by a strong strength brine.
Medium strength brine recipe is 3/4cup pickling salt (no iodine) to 1 gallon of water.

  • I made 1 quart of brine which was 3tablespoons of salt to 4cups of water.
  • The olives were covered w the brine and a plastic bag was used to submerge them.
  • This was loosely capped and placed in storage for a week

Strong brine recipe is 1.5 cups pickling salt : 1 gallow of water
  • This will equate to 6tablespoons pickling salt : 4cups water
  • This will stand for a month

Threw some extra into a dry salt bath

Took the extra olives and covered them in salt. Will shake this once a week for 4weeks. Possibly changing the salt at week2
