Using salt brine to cure mission olives from our tree
The salt brine approach has two steps. It starts by using medium strength brine followed by a strong strength brine.
Medium strength brine recipe is 3/4cup pickling salt (no iodine) to 1 gallon of water.
- I made 1 quart of brine which was 3tablespoons of salt to 4cups of water.
- The olives were covered w the brine and a plastic bag was used to submerge them.
- This was loosely capped and placed in storage for a week
Strong brine recipe is 1.5 cups pickling salt : 1 gallow of water
- This will equate to 6tablespoons pickling salt : 4cups water
- This will stand for a month

Threw some extra into a dry salt bath
Took the extra olives and covered them in salt. Will shake this once a week for 4weeks. Possibly changing the salt at week2
