Pickle Spice Ratio
I keep a premade mix of the following in a small tuperware:
6 Bay Leaves
6 small hot peppers
1tbsp whole black peppercorns
1tbsp mustard seeds
1tsp fennel seeds
2tsp allspice berries
1tsp cloves
2tsp coriander seeds
1/2tsp grated nutmeg
1tbsp dill seeds

This is Salt Pickles Take 1 - July 2021
The salt:water ratio is 1tbs:2cups (hot water)
I included 1 chopped clove garlic, coriander seed, spice mix
I let the mix set at room temperature for an hour and then refrigerated.
They are ready to eat in 24hrs.
July 2023:
Added 2 long cucumbers to a 1qt mason jar as seen below.
Filled it w 2tbsp salt, 3cloves chopped garlic and a tablespoon of the above NYC new pickle spice mix.
Moved it straight to the fridge. Should be ready in 24hrs.
July 2024:
Added 2 long cucumbers and a couple radishes to a 1qt mason jar as seen below.
Filled it w 2tsp salt, 3cloves chopped garlic, a tsp of sugar, and a tablespoon of the above NYC new pickle spice mix.
Moved it straight to the fridge. Ready in 24hrs. Smaller pickles work better. Didn't really taste the sugar.
September 2025:
Again two tablespoons of salt were added to a quart jar. This time I included two large cucumbers and a pepper, the above spice mix, 2cloves of garlic, a sprig of tarragon, and a sprig of oregano. The top was covered with grape leaf
Moved it straight to the fridge. Ready in 24hrs.
August 2025:
Just one tablespoon of salt was added to a quart jar. This time I included two large cucumbers and a hot pepper broken in half, the above spice mix, 2cloves of garlic, a sprig of tarragon, and a sprig of oregano. The top was covered with grape leaf
Moved it straight to the fridge. Ready in 24hrs.
Could have used more salt and corriander seeds
July 2026:
1.5 tablespoons of Nay's Fathersday salt was added to a quart jar with two large cucumbers, the above spice mix, 2cloves of garlic, sprigs of tarragon English Lovage, corriander and oregano. The top was covered with grape leaf
Moved it straight to the fridge. Ready in 24hrs.
Touch less salt next time and more focus on garden spices. Corriander and Allspice worked good
